Cold Buckwheat Noodles with Dipping Sauce (Zaru-soba)
Making your own sauce is easier than you think and tastes much better than the store-bought kind. It also keeps well in the refrigerator.
Sauce ½ cup mirin
½ cup soy sauce
2¼ cups water
1 cup dried bonito flakes
Noodles 300-gram package soba (buckwheat) noodles
½ sheet nori (dried laver), cut into fine threads
(⅛ inch x ¾ inch)
4 teaspoons wasabi paste
¼ cup finely chopped green onions
For the sauce: Bring the mirin to a boil in a saucepan. Add soy sauce, water, and bonito flakes and bring to a boil again. Reduce heat and simmer for about 2 minutes. Strain and let cool.
