Ingredients
1 egg, lightly beaten
1/2 C. soft breadcrumbs
1 (14 oz.) cans sauerkraut, rinsed and well
3 tbsp dried parsley flakes
drained
1/4 tsp ground allspice
2 medium potatoes, peeled and cubed
1/4 tsp ground nutmeg
2 medium carrots, sliced
1/4 tsp pepper
2 celery ribs, sliced
1 1/2 lb. ground beef, crumbles
1 (1 oz.) envelope onion soup mix
2 (14 1/2 oz.) cans beef broth
1 tbsp sugar
1 (14 1/2 oz.) cans diced tomatoes,
1/2 tsp pepper
undrained
1 bay leaf
Directions
1. Set your oven to 400 degrees F before doing anything else and arrange a greased rack in a shallow baking dish.
2. In a large bowl, add the beef, egg, breadcrumbs, parsley flakes, allspice, nutmeg and pepper and mix till well combined.
3. Make 1-inch balls from the mixture.
4. Arrange the balls over the prepared rack in baking dish.
5. Cook in the oven for about 15 minutes.
6. Drain the pan liquid.
7. In a large pan, mix together the remaining ingredients.
8. Add the meatballs and bring to a boil.
9. Reduce the heat and simmer, covered for about 30-35 minutes.
10. Discard the bay leaf before serving.
