When she started working with me, my assistant, Barbara, thought she hated mushrooms because the only ones she knew were those white “button” mushrooms we used to buy at the grocery store. Once she discovered the world of porcini, morels, and shiitake mushrooms, she became a convert. This is a perfect quick autumn meal when it’s cold outside, the mushrooms are plentiful, and you feel like a dinner that will warm your insides.

1 ounce dried morel mushrooms

½ pound fresh porcini or cremini mushrooms

4 cups chicken stock, preferably homemade

6 tablespoons (¾ stick) unsalted butter

2 ounces pancetta, diced

½ cup chopped shallots (3 shallots)

1½ cups Arborio rice

½ cup dry white wine

½ teaspoon saffron threads

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

2⁄3 cup freshly grated Parmesan cheese, plus extra for serving
