Apricot & nut loaf

This fat-free, fruit and nut loaf is the perfect accompaniment to a pot of Earl Grey tea. The apricot topping adds an extra delicious layer, as well as looking so pretty.

60 g/½ cup wholemeal/whole-wheat flour

30 g/3 tablespoons ground almonds

160 g/¾ cup packed dark brown sugar

140 g/1 cup sultanas/golden raisins

120 g/1 cup chopped dried apricots

75 g/½ cup chopped mixed nuts

2 eggs, lightly beaten

TOPPING

10 whole dried apricots

50 g/3 tablespoons apricot jam/preserves

450-g/1-lb. loaf pan, lined with parchment paper

MAKES 1 LOAF CAKE
