CHOCOLATE FOR TEMPERING

400g [14oz] good-quality dark [bittersweet] chocolate that doesn’t contain vegetable oil, finely chopped

It’s easiest to work with this larger quantity when tempering, as smaller amounts will experience quicker temperature changes! Feel free to make a larger quantity, and any leftover chocolate can always be re-melted and reused later!

FILLING (PER BOMBE)

1 flat tsp unsweetened cocoa powder, plus extra for filling

1–2½ tsp caster or granulated sugar (depending on your taste), plus extra for filling
