In a medium bowl, whip egg yolks, 7 tbsps. sugar and eggs to just incorporate. Gently and gradually whip mixture of cream to egg mixture without making a lot of froth. Pass the custard through small sieve right in prepped ramekins, distributing equally, the mixture will fill the ramekins. Put sufficient hot water into the baking pan to reach midway up the ramekin sides.
Bake for 40 minutes, till the middles of flans are softly set. Turn the flans onto rack to cool down. Refrigerate for 2 hours, till cold. Refrigerate with cover overnight. May be done 2 days in advance.
