VIRADO À PAULISTA

(PORK CHOPS WITH RICE AND REFRIED BEANS)

YIELD: 4 SERVINGS

FOR THE TUTU DE FEIJÃO

1 tsp olive oil

3 oz (85 g) slab bacon, finely diced

1 onion, finely chopped

3 cloves garlic, finely minced

1 ½ cups (307 g) dry pinto beans, preferably soaked overnight

4 ½ cups (1 L) cold water

2 bay leaves

½–1 cup (70–140 g) manioc/cassava flour

Kosher salt and freshly ground black pepper, as desired

FOR THE RICE

1 tbsp (15 ml) vegetable oil

1 onion, finely chopped

3 cloves garlic, finely minced

2 cups (400 g) long grain white rice, rinsed

Kosher salt, as desired

3½ cups (840 ml) hot water

FOR THE COLLARD GREENS

1 large bunch fresh collard greens

3 tbsp (45 ml) olive oil

4 cloves garlic, minced

Kosher salt, as desired

FOR THE BANANAS MILANESE

¾ cup (94 g) all-purpose flour

2 eggs, beaten

¾ cup (81 g) plain breadcrumbs

1 tsp kosher salt

2 bananas, peeled and cut into 2” (5-cm) pieces

Vegetable oil, for frying

FOR THE MEAT

4 boneless pork chops

Kosher salt and freshly ground pepper, as desired

1 tbsp (15 ml) vegetable oil

4 Calabresa sausages (see Notes)

Fried eggs, for serving
