Black pudding sausage roll

MORNING ROLLS

These rolls have been remarkably popular. Contrary to classic Scottish fare they are not soft, white and floury, instead chewy, crisp and crunchy with seeds. We fire them well for flavour which is borderline blasphemy when it comes to the traditional roll or bap in these parts. Regardless, we love them and thankfully so do our customers.

Makes 8

300 g (10½ oz/1¼ cups) warm water

250 g (8¾ oz/2 cups) strong white bread flour, plus extra for dusting

250 g (8¾ oz/2 cups) granary flour

10 g (2 teaspoons) dried instant action yeast

10 g (2 teaspoons) salt

sunflower oil, for greasing

small handful of pumpkin, linseed, sunflower and poppy seeds

semolina, for dusting
