16 – Spinach, Eggs and Rice

Albanian Buryani – so simple yet so tasty. It’s easily made, healthy and inexpensive. Basmati rice is quite flavorful when cooked with eggs and spinach.

Serving Size: 6 Servings

Total Cooking Time: 1/2 hour

Ingredients:

3/4 lb. of spinach, fresh

1 & 1/2 oz. of rice

1 onion, diced

1 tsp. of basil, fresh

6 eggs, large

3/4 oz. of butter, unsalted

Salt, kosher

Pepper, ground

1 tbsp. of oil, olive

1 quart of filtered water, boiling

Instructions:

1. In large sized sauce pan, melt oil and butter together. While they are melting, fill a kettle with one ounce of filtered water. Bring to boil.

2. Add onion to oil and butter in pan. Fry for several minutes till butter has melted fully and onion is beginning to turn brown.

3. Add rice. Stir constantly for one minute to mix rice with onion. Add boiling water carefully – it may spit. Cover pan. Bring to boil. Leave pan sitting for 8-10 minutes.

4. Add spinach. Stir till wilted completely. Bring mixture back to boil. Allow to boil uncovered till you only have a bit of liquid remaining on bottom of pan.

5. Crack eggs over top of mixture – now called Buryani. Cover with lid. Only allow the eggs to cook for a few minutes. Make sure whites have cooked fully before you remove from heat. Set pan aside to cool for three to five minutes and serve.
