Pisto & egg empanadas

People from the centre of Spain go to the beach at the weekend in summer, usually on Sunday, and take a picnic. Empanadas are a great option for this, as are traditional tortilla, because you can eat them cold.

Serves 8

1 aubergine (eggplant), diced into 1.5 cm (1 in) cubes

extra-virgin olive oil, for roasting and frying

2 medium free-range eggs

3 large tomatoes

2 onions, finely sliced

3 garlic cloves, crushed

2 teaspoons ground cumin

1 red (bell) pepper, sliced

sea salt and freshly ground black pepper

handful of flat-leaf parsley, finely chopped

finely grated zest of ½ lemon

For the pastry

350 g (12 oz/3 cups) plain (all-purpose) flour

½ teaspoon fine sea salt

170 g (6 oz) unsalted butter, cubed

1 free-range egg, plus 1 egg, beaten, to glaze

1–2 tablespoons whole (full-fat) milk
