Tie the thyme, oregano, and rosemary sprigs into a bundle with kitchen string and drop it into the pot. Bring to a boil, lower the heat to low, and simmer, stirring occasionally, until the beans are very tender (depending on the age of the beans, this could take 1 1/2 to 2 1/2 hours) and the broth has thickened. If the liquid seems low before the beans are cooked through, add a little water, 1/4 cup [60 ml] at a time. Discard the tied herbs and serve immediately. Leftover beans will keep in a covered container in the refrigerator for up to 5 days. Reheat before serving.
