Baked Potatoes with Asparagus and Cottage Cheese

Ingredients

4 medium potatoes

1 bunch asparagus, trimmed

75ml low-fat crème fraîche

75ml cottage cheese

1 tablespoon wholegrain mustard

Method

Heat the air fryer to 392°F/200oC. Scrub the potatoes and pat dry with kitchen paper.

Place in the fryer basket and cook for 25 minutes.

While the potatoes are cooking, wilt the asparagus in salted boiling water for 3 minutes till just tender.

Let the potatoes cool slightly, then cut off the tops, and scoop out the flesh into a bowl.

Combine with cottage cheese, crème fraîche, mustard, and asparagus.

Season and scoop back into the potato skins before serving.
