2 tablespoons extra virgin olive oil

1 red onion, diced

4 garlic cloves, minced

½ pound mild Italian pork sausage

2 large carrots, peeled and chopped

2 cups Joseph’s Grainery Lentils, rinsed (see Sources)

5 (14.5-ounce) cans beef broth

1 (28-ounce) can diced tomatoes with juice

2 tablespoons tomato paste

2 teaspoons chopped fresh rosemary

1 teaspoon dried oregano

1 cup packed fresh spinach

Salt and pepper

Grated Parmesan cheese, for garnish
