CHEF’S NOTES

You can easily substitute other fatty fish, such as mackerel or salmon, for the bluefish.

Bread crumbs should be made at home or purchased at your local bakery. Avoid store-bought bread crumbs, as they contain unwanted spices and seasonings. Do not use panko crumbs.

Dijon mustard is particularly important for this recipe for its tangy qualities and specific spices. Avoid using other styles of mustard such as yellow, spicy brown, etc.
