Armenian Kofta
500 g (1 lb) potatoes, boiled and mashed
750 g (1½ lb) lean lamb or veal, minced
1 egg, beaten
Salt and black pepper
30–60 g (1–2 oz) pine nuts
Butter
30–60 g (1–2 oz) small seedless raisins
Flour
Oil for deep-frying
Mix the potatoes and minced meat together in a bowl. Add beaten egg, and salt and pepper to taste, and knead vigorously by hand until the mixture is very smooth and soft. Fry the pine nuts in butter for a minute or two to colour them lightly. Drain and knead them into the meat and potato mixture, together with the raisins.
Shape into walnut-sized balls. Roll them in flour and deep-fry in hot oil until crisp and brown on the outside and well done inside.
