2. Dilute drops of food coloring in a small cup of water. Soak the fish-shape egg until it turns pink, adding more coloring as needed. Pat dry with a paper towel.

3. Line the bento box with lettuce. Arrange the musubi man, fried fish, and the pink fish-shape egg or other foods. Use a skewered cherry tomato to separate the musubi man and his fish.

Fried Fish

Makes about 8 servings, enough for leftovers

1 lb white fish fillets

a few pinches of salt and pepper

½ cup flour

¼ cup milk

1 egg

½ cup panko or fine bread crumbs

a few tbsp oil for frying

1. Slice each fillet into 3 or 4 smaller fillets and wash. Pat dry and season with salt and pepper. Chill in the fridge 30 minutes.
