Salmon Croquettes

This is just an old-fashioned Southern classic I get hungry for every once in a while.

1 (15-ounce) can salmon, drained

3 large eggs, divided

1 teaspoon lemon juice

1 teaspoon black pepper, divided

1 tablespoon finely chopped green onion

2½ cups saltine cracker crumbs, divided

⅔ cup shredded Swiss cheese

1 (10-ounce) can cream of mushroom soup, divided

⅔ cup milk

½ teaspoon Worcestershire sauce

¼ teaspoon garlic salt

Vegetable oil for frying
