Directions

Preheat the oven at 350°F (177°C).

Line a muffin pan with muffin liners or grease each hole with cooking spray or vegetable oil.

In a mixing bowl, mix the coffee, instant espresso powder, whole milk, and vanilla extract.

In another large bowl, beat up the butter with the granulated sugar and stir in the egg.

Then, pour in the espresso mixture into the butter mixture and mix until clumpy and lumpy.

In a third bowl, combine the flour, cocoa powder, baking powder, and stir them into the wet ingredients.

Transfer the batter to the muffin pan, filling the liners just ¾ full to allow room for the muffins to rise.

Bake in the oven for about 12-15 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and let the muffins rest in the pan for 5 minutes. Then, transfer to a wire rack to cool down.

Serve and enjoy.
