Smoked Salmon Pasta

This is a terrific way to prepare healthy salmon.

Cooking Time: 23 minutes

Servings: 8

Ingredients:

16 oz. penne pasta

¼ cup butter

1 small, chopped onion

3 minced garlic cloves

3 tbsp. flour

2 cups light cream

½ cup white wine

1 tbsp. lemon juice

½ cup grated Romano cheese

1 cup sliced mushrooms

¾ lb. chopped smoked salmon

Directions:

Cook the pasta in a pot of salted water for 10 minutes. Drain.

Melt butter in a skillet and sauté the onion and garlic for 5 minutes.

Stir the flour into the butter mixture and keep stirring for 2 minutes.

Gently add the light cream.

Bring the liquid just below the boiling point.

Stir in the cheese and keep stirring until the mixture is smooth, about 3 minutes.

Add the mushrooms and simmer for 5 minutes.

Transfer the salmon to the skillet and cook for 3 minutes.

Serve the salmon mixture over the penne pasta.
