Roasted Candy Roaster or Cushaw Squash

Both the Candy Roaster and the cushaw squash varieties range from large (10 pounds) to very large (20 to 25 pounds), with some Candy Roasters reaching ginormous (250 pounds!) proportions. Unless you have a very large family, you’ll want to select a squash at the smaller end of the spectrum.

Each is delicious as a side dish, simply cut into pieces, roasted, and served with butter and maybe a drizzle of sorghum syrup. You can eat your fill, then puree the rest and freeze it in small portions for baking pies, making soup (use your favorite pumpkin soup recipe), or using in any way you might use a puree of sweet potato, pumpkin, or winter squash.

The Candy Roaster will intensify in flavor and density of flesh the longer you store the fresh squash. It can keep several months in a cool, dry, dark place.
