Savory Stuffed Acorn Squash
All the flavors of fall are baked into this nutritious dish. Use fresh herbs if you have them, and breathe deeply to savor the magical aromas coming from your kitchen as the squash bakes.
Serves 4
Ingredients
2 acorn squash
1 teaspoon garlic powder
1⁄2 teaspoon salt
2 ribs celery, chopped
1 onion, diced
1⁄2 cup sliced mushrooms
2 tablespoons vegan margarine or oil
1⁄4 cup chopped walnuts
1 tablespoon soy sauce
1 teaspoon parsley
1⁄2 teaspoon thyme
1⁄2 teaspoon sage
Salt and pepper, to taste
1⁄2 cup grated vegan cheese (optional)
Preheat oven to 350°F. Chop the squash in half lengthwise and scrape out any stringy bits and seeds.
Drizzle squash with garlic powder and salt, then place cut-side down on a baking sheet and bake for 30 minutes or until almost soft; remove from oven.
In a large skillet, heat celery, onion, and mushrooms in vegan margarine until soft, about 4–5 minutes.
Add walnuts, soy sauce, parsley, thyme, and sage, stirring to combine well, and season generously with salt and pepper. Heat for another minute or 2 until fragrant.
Fill squash with mushroom mixture and sprinkle with vegan cheese. Bake another 5–10 minutes until squash is soft.
