1 medium fennel bulb, thinly sliced
1 blood orange, thinly sliced
1 lemon, seeds removed and thinly sliced
1 lime, seeds removed and thinly sliced
4 sprigs fresh dill, plus more for serving
¼ cup extra-virgin olive oil
Salt and freshly ground black pepper
1 (2-pound) skinless salmon fillet, deboned
2 tablespoons Chili Oil (this page), plus more for drizzling
Flaky sea salt
1. Preheat the oven to 350°F.
2. Place the fennel, orange, lemon, lime, and dill in a shallow baking dish big enough to hold the salmon (you can cut the salmon in half or into 4 fillets, if needed). Pour the olive oil over the top of the fennel and citrus slices and season them with salt and pepper, using your hands to combine everything.
