SALMON SALAD SANDWICH
Take a break from tuna with this other fish-from-a-can sandwich.
1 (7.5-ounce) can Alaska red salmon, drained
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons diced red onion
2 tablespoons chopped Kalamata olives or tapenade (see this page)
2 bagels, toasted
thinly sliced tomato and lettuce leaves
Transfer the salmon to a bowl, and remove any large bones. Flake and mash with a fork. Add oil, lemon juice, red onion, and olives, and combine and mash to form a spread. Make sandwiches as you wish on bagels with suggested toppings. Store in the refrigerator.
