Preheat the oven to 360°F (180°C) and line a baking tray with parchment paper.
Heat 1 tablespoon (15 ml) of olive oil in a large pan or wok over medium heat, then add the onion and cook for about 3 to 4 minutes, or until translucent. Add the garlic, walnuts and beans, and stir-fry them for an additional 2 minutes, then turn the heat off. Transfer the bean mixture in a food processor. Add in the tomato paste, soy sauce, basil, oregano, lemon zest, nutritional yeast and oats. Pulse until reaching a thick mixture, stopping to scrape the sides of the food processor if necessary. Season with ¼ teaspoon (or to taste) of sea salt, and add a generous pinch of freshly cracked black pepper.
Use your hands or an ice cream scoop to form small balls. If the mixture is too wet, add an extra tablespoon (6 g) of oats. Arrange the balls over the prepared baking tray, and brush them with the remaining 1 tablespoon (15 ml) of olive oil. Bake them for 15 minutes, turning them halfway through the baking time. Once ready, remove them from the oven and set them aside until needed.
In the meantime, prepare the spaghetti and the tomato sauce. Fill a large stockpot two-thirds full with lightly salted water and bring to a boil. Heat a separate large saucepan with 2 tablespoons (30 ml) of olive oil. Fold in the tomatoes and their juice, followed by the garlic and stir-fry them for 5 minutes. Add in 2 basil leaves and a pinch of sugar, cover with a lid and cook for 15 minutes.
Discard the garlic and season the sauce with ¼ teaspoon (or to taste) of fine sea salt and a pinch of freshly cracked black pepper, then stir in the prepared meatballs, add the remaining 2 basil leaves, and turn off the heat.
Add the pasta into the pot of boiling water and cook until al dente, according to package directions, about 8 minutes. Drain the pasta and add it into the pan with the tomato and meatball sauce. Stir all the ingredients together and serve.
