BURGOO

The first NASCAR race was run in 1948 on the beach track at Daytona, Florida. But stock car racing has its roots in North Carolina and Virginia, where Junior Johnson and his fellow moonshiners souped up their cars to outrun the police. Burgoo is a traditional stew that hails from this region. It was traditionally made with small game such as rabbit, possum, or squirrel. Feel free to substitute squirrel for the chicken thighs.

Serves 8

1 pound lamb shoulder roast, cut into 1-inch cubes

8 ounces pork butt, cut into 1-inch cubes

4 cups beef broth

4 cups chicken broth

1½ pounds chicken thighs

2 pounds potatoes, peeled and diced

1 medium red onion, diced

1 package (12 ounces) frozen fava or lima beans

1 green bell pepper, cored, seeded, and coarsely chopped

3 carrots, peeled and coarsely chopped

1 package (12 ounces) frozen corn

2 dried ancho chiles, stemmed, seeded, and chopped into ½-inch pieces

½ teaspoon cayenne

1½ teaspoons kosher salt

1 teaspoon ground black pepper

1 can (28 ounces) chopped tomatoes

4 cloves garlic, finely chopped

2 teaspoons cider vinegar

2 teaspoons fresh lemon juice

3 tablespoons bourbon

3 tablespoons Worcestershire sauce

1 tablespoon hot sauce

½ cup chopped fresh parsley
