BLACKENED RED SNAPPER

Blackened fish is a Cajun way of preparing fish. It is a very simple technique as the blackening comes from a spicy dry rub that is put on the fish. All types of fish—including snapper, catfish, tilapia, grouper, salmon, and swordfish—taste delicious blackened. Try it with your favorite!

4 red snapper fillets (6 ounces each)

4 tablespoons blackened seasoning (see page 235 for a homemade recipe)

2 tablespoons olive oil

Lemon wedges, for serving

Season both sides of the fish with the blackened seasoning. In a large skillet over medium-high heat, warm the oil until a few droplets of water sizzle when carefully sprinkled in the pan. Sear the fish on one side until the meat is well browned and releases easily from the pan, 4 to 5 minutes. Turn over the fillets and cook until desired doneness, about 5 more minutes. Serve warm with lemon wedges.

SERVES 4.
