A Low Country boil almost always has a dusting of Old Bay, boiled potatoes, sausage, and corn. It may contain one or more types of seafood, but shrimp are the champion of this region. It must have the freshest seafood you can get your hands on—that, my hungry friends, is where the magic lies. On Cumberland, good seafood is always on hand. When shrimp are needed, we can procure sixty to a hundred pounds of head-on Georgia whites, fresh off a shrimping boat.

ESSENTIAL EQUIPMENT

1 large stainless-steel pot, preferably one that comes with a perforated basket. The basket makes for easy removal of the ingredients from the cooking water. It’s essential for that awe-inspiring moment when you empty the basket of overflowing seafood onto the table.
