1.Using the medium holes of a box grater, shred the potato into a bowl of cold water. Drain the potato and transfer it to a clean kitchen towel. Gather the towel and squeeze the potato over the sink to remove any excess water. Transfer the shredded potato to a medium bowl.
2.Add the melted butter, egg yolk, salt, black pepper, and cayenne pepper and mix well. Mix in the Pecorino (if using). Divide the potato mixture in half and shape each half into an oval patty.
3.In a small skillet, heat 2 tablespoons of the oil over medium heat until it shimmers. Add the potato patties and cook for about 4 minutes per side, or until golden brown. Transfer the hash brown patties to paper towels to drain.
