STRAWBERRY LEMONADE

I love coffee, but even I don’t drink it on the warmest summer days. Instead, I spend the days in the shade sipping on ice cold strawberry lemonade, preferably with a good book in my hand. The strawberries add a fruity sweetness to the lemonade, which I absolutely love.

MAKES 6 SERVINGS

10 organic unwaxed lemons

270g (9½oz/1⅓ cups) caster (superfine) sugar

10 strawberries

Ice cubes

Mint leaves

Fill a large saucepan with 1 litre (35fl oz/4¼ cups) of water.

Cut the lemons into wedges and squeeze the juice into the saucepan, then place the squeezed lemon wedges into the pan too.

Bring the liquid to a boil, then add the sugar. Allow to boil for 5 minutes.

Turn off the heat and allow to cool completely, then pour into clean glass bottles. Store in the fridge until it’s time to serve.

To serve, put the lemonade and strawberries into a blender and blitz until smooth.

Pour into six glasses and add ice cubes and a couple of fresh mint leaves to each glass.
