Spiced cabbage, saffron mayo and spiced crumble
Use a top-quality, free-range turkey to ensure maximum flavour. Our most “Christmassy” kebab brings soft and sympathetic accompaniments to celebrate a much-maligned bird.
Serves 4
750 g turkey breast, diced
FOR THE TURKEY SPICE
½ teaspoon cayenne pepper
1 teaspoon ground cinnamon
½ teaspoon ground cloves
2 teaspoons ground coriander
2 teaspoons ground cumin
½ teaspoon ground nutmeg
FOR THE SPICED CABBAGE
500 g hispi or sweetheart cabbage
Olive oil
1 tablespoon garam masala
FOR THE SPICED CRUMBLE
100 g panko breadcrumbs
20 g pumpkin seeds
30 g roasted almonds, crushed
TO SERVE
Saffron
1 portion of Le Bab Mayonnaise (see here)
