4. Easy Red Cabbage And Walnut Slaw

(Prep time: 10 minutes. Calories: 150)

This delicious, light slaw is an ideal alternative to traditional coleslaw.

Ingredients

• ½ red cabbage sliced thin

• 1 large apple, cored, peeled and grated

• 1 finely chopped shallot

• 2 tbsp apple cider vinegar or red wine vinegar

• 2 tbsp raisins

• Handful of walnuts, chopped

• 2 tbsp each walnut oil and olive oil

• Salt and pepper to taste

• Cilantro sprigs (optional)

Method

• In a bowl, mix the shallot and vinegar and allow the mixture to infuse for 5 minutes.

• Add the oils, seasonings and cabbage. Mix together.

• Add the grated apple and combine.

• Add the raisins and nuts and mix well. You can allow the salad to rest for half an hour or eat immediately. Garnish with cilantro.

• Variation: Add finely chopped tomatoes in place of apple as shown in image above.
