Coleslaw

AUDREY STARRETT, DONEGAL: JACK OF ALL TRADES

Coleslaw is such a classic salad. It’s also extremely simple to make. I tend to make it with white cabbage but red works well too, or you could try half and half.

Serves 6–8 as part of a meal

350g (12oz) white or red cabbage, washed and shredded

225g (8oz) carrots, peeled and coarsely grated

1 spring onion, finely sliced

2 tablespoons mayonnaise

3 tablespoons plain yoghurt

salt and freshly ground black pepper

1 tablespoon chopped fresh parsley
