Gently heat the oil in a skillet and add the cumin seeds. When they are sizzling, stir in the scallions, garlic and chiles and fry for 30 seconds before stirring in the garam masala. Turn off the heat and allow the garam masala to cook in the residual heat.

In the meantime, mix together the beef, orange zest, egg, bread crumbs (if using) and salt and pepper in a bowl. Add the fried spices and mix well. Form into burger shapes and pop in the fridge for 30 minutes to firm up, if you have time.

Make the slaw by mixing all the ingredients together in a serving bowl. Taste and adjust the seasoning.

Cook the burgers in a preheated griddle pan or on an outdoor grill, or in a broiler preheated to high, for a few minutes on each side, flipping them often, or until cooked through to your liking. Serve them inside a burger bun topped with slaw, along with your favorite burger extras.

Sometimes I stuff my burgers with a little cheese, such as mozzarella or blue cheese. It melts perfectly in the middle of the burger and oozes out as you bite in.
