Chocolate Tapioca Pudding

This tapioca recipe is very simple to make because the ingredients call for quick-cooking tapioca. I like to serve this with some hot tea and thin wafers. Preparation Time: 15 minutes

Servings: 6

Ingredients:

• 24 ounces milk

• 1 ½ ounces quick-cooking tapioca

• 1 beaten egg

• 4 ounces white sugar

• 4 ounces chocolate, chopped

• 1 ½ ounces cocoa powder, unsweetened

• 1 teaspoon vanilla extract

Directions:

1. Stir milk, tapioca, egg and sugar together in a saucepan until sugar has completely dissolved. Let the mixture stand for 5 minutes 2. Gradually whisk in chocolate and cocoa to the milk mixture until well combined.

3. Bring mixture to a boil on medium heat and whisk as it boils for 2 minutes.

4. Remove pan from heat and whisk in vanilla. Let the mixture cool for 20 minutes
