12. Simple Costa Rican Rice

Yield: 4 servings

Duration: 30 minutes

Ingredient List:

1 cup of long-grain white rice

2 tablespoons of vegetable oil

½ cup of white onion, chopped

½ cup of red bell peppers, chopped

1 clove of garlic, peeled

1 ¾ cups of water

Dash of salt

How to Cook:

Rinse the rice under running water until the water begins to run clear. Strain and set aside.

Place a large saucepan placed over medium heat. Add in the vegetable oil and once hot, add in the rice. Stir well and cook for 2 to 3 minutes or until soft.

Add in the chopped onions, chopped red bell peppers, and peeled garlic. Stir well to mix.

You will now need to make sure this mixture is brought to a boil. Cover and reduce the heat to low. Continue to cook for 15 to 20 minutes or until the rice is cooked through.

Remove from heat and set aside to sit for 10 minutes while covered. Serve with a meal of your choice.
