In a medium-sized pot, heat the olive oil over a moderately high flame. Add in the shallot and cook for about 3 minutes or until tender and translucent.

Pour the vegetable broth into the saucepan and bring to a boil; immediately turn the heat to a gentle simmer.
Cook for about 20 minutes or until all the liquid has absorbed. Taste and adjust the seasonings. Bon appétit!
