Raw asparagus is a winner in my book. Crunchy and bright green in flavor, it pairs here with the umami wonder of bonito flakes, the nuttiness of almonds, and the crispness of apple.

Serves 4 as a side

1 pound asparagus

2 tablespoons olive oil

2 teaspoons freshly squeezed lemon juice

Sea salt

½ cup slivered almonds, toasted

1 apple, cored and thinly sliced

¼ cup bonito flakes
