1.Mix the garlic, mustard, and lemon juice. Then add the oil, little by little, until you get a creamy dressing.
2.Add the tomato puree and thyme.
3.Remove the skin and bones from the chicken and cut it into pieces. Soak the poultry in the marinade, preferably over-night.
4.Thread the chicken pieces on wooden or metal skewers. You can also thread pieces of pepper and whole mushrooms in between the chicken pieces.
5.Barbeque or grill, or cook in the oven. Serve with a good aioli, lettuce, and potatoes.
