How to heat up a tortilla: the pious way and the (ever-so-slightly) sinful way

Although tortillas are technically already cooked, they need to be toasted in order to show off their best self. Traditionally, a tortilla is heated up on a griddlelike pan, or comal (a heavy, dry cast-iron skillet is a good substitute), for about 15 seconds on each side, until it puffs a bit and starts to smell corny. We are completely in support of this.

However, at Tacolicious, we add a little oil to the cooking surface, something that we learned from San Francisco’s beloved La Taqueria. It might be just a teaspoon less pious than the above technique, but trust us, it has delicious results.

To heat your tortillas with oil, drizzle a thin slick of vegetable oil onto a heavy skillet placed over medium heat. When the oil is hot, heat the tortilla on it for about 15 seconds, until the tortilla turns a bit more golden. When the aroma of heaven hits your nose, drizzle a tiny bit of oil on the top of the tortilla, flip it over, and heat for 15 seconds longer. The idea is not to fry it but to bring out more of its corny self.

Our tacos are each wrapped in two tortillas, so we stack them: once the bottom tortilla has cooked, drizzle oil on the top tortilla, and flip the paired tortillas over just as you would a single tortilla. The middle of the two tortillas will meld together slightly in the process. Leave them that way. It helps make for a nice sturdy taco.
