4½ cups of cooked sushi rice

12-ounce of thinly sliced smoked salmon

Directions:

In a bowl, add cream cheese, wasabi paste and scallion and mix till well combined.

Cut the top quarter of each nori sheet along short end.

Place 1 nori sheet, shiny side down, over a bamboo mat covered with plastic wrap, with long end toward you.

Place ¾ cup of the rice over each nori sheet and with moist hands press them, leaving a 1-inch border on one long end of nori.

Gently flip the nori sheet. Spread 1½ tbsp. of cream cheese mixture over top third of shiny side of nori and top with 1/3 cup of the salmon.
