Shrimp and Sweet Pea Rice
I love serving dinners that include a bit of seafood or meat in the dish rather than as a stand-alone item. This one needs to be on a table beside sliced tomatoes, summer squash, cooked garden greens, and hot bread.
YIELD: 6 SERVINGS
2 tablespoons canola oil, divided
4 large eggs, lightly beaten and divided
¼ teaspoon black pepper, divided
⅛ teaspoon salt
1 ½ cups sliced green onions, divided
2 garlic cloves, peeled and minced
1 pound salad shrimp
5 cups cooked short-grain rice, chilled
¼ cup low-sodium soy sauce
½ teaspoon onion salt
1 (10-ounce) package frozen sweet green peas, thawed
2 tablespoons chopped fresh cilantro
