Freshness is of vital importance for all ingredients, but especially for fish and shellfish. Cook fish and shellfish the day of purchase, and refrigerate until ready to use. Never use fish or shellfish that has been previously frozen, because freezing ruins the texture. The exception is frozen shrimp that have been defrosted, but fresh is always preferable.
