Cheesy Cauliflower Caprese Casserole
Preparation Time: 15 minutes
Cook Time: 1 hour 15 minutes
Serve: 6 servings
Ingredients
1/3 tsp black pepper, ground (divided)
¼ tsp salt (divided)
Chopped basil leaves (a handful)
1 cup (halved) grape tomatoes
1 cup mozzarella cheese (shredded)
1/3 cup parmesan cheese (grated)
1/3 cup heavy cream
2 tbsps tomato paste
1 cup tomato sauce
1 medium (cut into florets) cauliflower head
Olive oil
Preparation
1. Use a little olive oil to rub a med-large baking dish. Let stand.
2. Place a rack in the middle of the oven and heat up the oven to 425°F.
3. In a high-sided baking pan, add the cauliflower florets and arrange in an even layer.
4. Sprinkle ground black pepper, salt and olive oil (1 tbsp) over the layered cauliflower florets.
5. Transfer the baking pan into the oven and bake until the florets are caramelized lightly, for 30 minutes.
6. On low heat, place a big saucepan over heat and add in tomato paste and sauce. Cook until the tomato mixture is warm.
7. Add in ground black pepper, salt, grated parmesan cheese and heavy cream into the tomato mixture.
8. Stir the tomato mixture until combined.
9. Turn off the heat and add in the baked cauliflower florets into the tomato mixture. Stir together.
10. Add in basil (a pinch), half of grape tomatoes and 1/2 cup of shredded mozzarella cheese into the tomato mixture.
11. In the greased baking dish, transfer cauliflower mixture.
12. Sprinkle 1/2 cup of mozzarella cheese over the cauliflower mixture.
13. Add the remaining half of the grape tomatoes over the cauliflower mixture.
14. Reduce the oven heat to 350°F and transfer the baking dish into the oven.
15. Bake the cauliflower mixture for 30 minutes and broil until the mozzarella cheese releases bubbles and is golden, for a minute to 2 minutes.
16. Remove the baking dish from the oven and set aside for 5 minutes to cool.
17. Sprinkle the remaining basil leaves over the cauliflower casserole.
18. Serve the cheesy cauliflower caprese casserole.
