Boil the rice in plenty of boiling water according to the package instructions. Drain the rice and rinse it under cold water, then drain it again and place it in a large mixing bowl.
Add the remaining salad ingredients to the mixing bowl and drizzle with a generous amount of olive oil, season with salt and pepper and mix well again. Check the seasoning and serve immediately. I find that this salad is best eaten immediately but, of course, it will also be fine the next day—just a tad more watery. To remedy this, discard any excess liquid and drizzle over a little more olive oil to give the leftovers a new lease on life.
