Gísli Matthías Auðunsson, the chef at Matur og Drykkur (‘Food and Drink’), is part of a new breed of young Icelandic cooks who are beginning to change Icelandic cuisine, rather in the way that René Redzipi in Copenhagen did, and I say this because Iceland and Denmark were one and the same for hundreds of years. This recipe is based on a dish of his grandmother’s but with twenty-first-century additions. It is not a dish to cook every day, but it is worth putting in the effort, even down to the dill oil. Feel free to use fish other than halibut, since outside Icelandic waters it’s a threatened species, though Pacific halibut is available in the UK and is excellent, and it is possible to buy farmed halibut too. I suggest hake or even cod as a substitute.
