Mam’s Old-style Macaroni Cheese

Ingredients

1½oz of cornflour

4oz of grated cheese

Half a pint of milk

1oz of butter

Quarter of a teaspoon of salt, pepper and mustard

6oz of cooked macaroni

(boil the macaroni in half a pint of water)

Method

• Mix the cornflour to a smooth cream with a little of the milk.

• Bring the rest of the milk to the boil separately, and then add the cornflour cream.

• Add the butter and then the cheese, and boil for 3 minutes.

• Place the cooked macaroni into the pot and stir in the seasoning (add tomatoes for taste if you wish).

• Pour the whole mix into a buttered pie dish, and bake in a moderate oven for 15 minutes.
