DEVILED EGG SALAD
I like to think of leftover deviled eggs as halfway on their journey to egg salad. Finely chop whatever deviled eggs you have left, filling and all, and put them into a bowl. Add a little minced onion (any color) and a little minced celery if you’re into those things in your egg salad. Bind with as much mayonnaise as you like (since the filling already has a bit, you shouldn’t need too much). Serve on toast or lettuce leaves.
CUBAN SANDWICHES
Leftover pulled pork and pickled vegetables can be turned into divine Cuban sandwiches. Spread the cut sides of Cuban sandwich rolls (or any long sandwich roll with a thin, crisp crust and a soft interior) with yellow mustard and mayonnaise. Place a slice of Swiss cheese on both cut sides and then top one half with a layer of pulled pork, a few thin slices of ham, and some of the pickled vegetables. Close the sandwiches (there should be cheese on either side of the meat and pickles). Put a knob of butter into a large skillet set over medium heat. Once it melts, place as many sandwiches as will fit in a single layer. Top the sandwiches with another heavy skillet and press down hard. Cook the sandwiches until the undersides are golden brown and crisp, about 2 minutes. Remove the sandwiches from the skillet, melt another knob of butter, and then return the sandwiches, flipping them over, to the skillet (so what used to be the tops should now be the bottoms). Top with the second skillet again and press until the second sides are browned and crisp, about 1 more minute. Cut in half on the diagonal and serve immediately. Oh, and if you have a sandwich press, by all means use it.
