Gandules Rice
4 medium-size free-range smoked pork chops, diced
2 tablespoons olive oil
2 tablespoons sofrito
1 (4-ounce) can tomato paste
2 (4-ounce) small packages Sazon*
1/2 tablespoon Goya Adobo all-purpose seasoning
3 cups Rice Perla (available at Latin American stores)
1 (16-ounce) can Gandules Pigeon Peas, with juice
4 cups hot water, or enough water so it is level with the rice
1 (5-ounce) jar Manzanilla olives, drained
8 cilantro leaves
*This is a type of seasoned salt. Typical ingredients include, cilantro, achiote, garlic, and salt. Some brands contain MSG, so check labels carefully if you wish to avoid the additive.
In a large skillet, fry diced pork chops in oil. Add the sofrito and sauté for 1 to 2 minutes then add the tomato paste and sauté for 1 to 2 minutes more.
In a large cooking pot, place pork chop and tomato paste mixture with all other ingredients except cilantro and simmer for 15 to 20 minutes. Simmer very low, uncovered, for 10 minutes. Fold the cilantro into the rice. Cover and simmer for 35 minutes.
Makes 8 servings
