“Aunt Josulyn” has a roti stand near the beach in Barbados, and she showed me how to make these breads. I even worked at the stand. She’s from Guyana—roti country. The Guyanese and Trinidadians will always argue over whose roti is best, though.
Pumpkin-Cinnamon Empanadas
Makes 24 empanadas
Many countries have some form of stuffed pastry. They can be savory or sweet, hot or cold, a snack or a light meal, or a dessert. Empanadas are stuffed pastries from Spain, cousin to Indian samosas. My friend Andrea Bergquist, who helped me open the Red Rooster in Harlem, makes wonderful empanadas. She starts with a flaky yeast pastry and comes up with the best combinations for fillings. I thought of her as I started to play with the pumpkin, brown sugar, and cinnamon in this recipe. I think these empanadas taste like autumn. I can’t resist eating one as soon as they come out of the oven. The rest, I share, or have as a snack throughout the day.
