I can distinctly remember eating my first pulled pork grilled cheese sandwich at the food trucks in Seaside, Florida, along Scenic Highway 30A. My Gracie Girl and I had decided to tool around the shops that morning to work up an appetite for lunch. We agreed on the grilled cheese truck, and this recipe is my version of the sandwich I ate that day: rich, smoky pulled pork with sweet caramelized onions and loads of melted Gruyère cheese on saucy, buttery grilled bread. So simple but with so many flavors! We people-watched and ate our grilled cheeses and made a lasting food memory! I love recreating those memories in my own kitchen.
